Serves 4 – 6.
100g sprouted maple peas
50g Pearl Barley
Red peppers (roast and peel)
2 cherry tomatoes cut into quarters
1 red onion – finely chopped
Green beans (cut in half)
15g Pea Shoots
Juice of one lemon (about 1 tablespoon)
Salt and freshly ground pepper to taste
- Cook the pearl barley until tender and roast and peel the red pepper.
- Break the feta into a bowl and add the cooked pearl barley, spinach, diced red pepper, celery and green beans.
- Add the sprouted maple peas, the quartered cherry tomatoes, peas, cucumber and sliced onion. Toss this well and add the vinaigrette and check the seasoning.
- Finish with picked parsley leaf, pea shoots, olive oil and lemon juice.
- Serve immediately.
